Aug 13: Enchilada Meat Mix in a Panini Roll with Avocado & Sour Cream; Creole Style Jambalaya with Sausage and Shrimp

Lunch

For lunch we heated the remaining Enchilada Meat Mix from our Tostados the other night. We finished the Panini Roll and, while hot, smeared the top with avocado and the bottom with sour cream. Then the meat was crammed in and topped with lettuce. It’s like a Taco in a Panini!

  • The Panini Roll is 63c
  • Dry aged 85/15 ground beef $8.57 or $2.14 per serve
  • Add 30c for Butter Lettuce
  • Add 30c for the Sour Cream
  • An Avocado is $1.20 or 60c per serve.

This turned out really well for $3.97 per serve.

Dinner

For dinner we repeated the Creole Style Jambalaya from Saturday night with fresh shrimp. It had picked up a little extra heat sitting on the refrigerator.

The Jambalaya is $5.66 per serve.
