Jun 28: (Cuban) Roast Pork with Apple Endive Salad

Lunch

As we were at Home Depot near New York Chicken and Gyro we picked up a Lamb Gyro each at $8.17 with tax and tip.

Dinner

We used the last of the Cuban Roast Pork as a more classic Roast Pork and served with an Apple Endive Salad.

  • We shared a full serve of the Pork or $1.60 per serve
  • The Endive were $3.99 for three and we used two, or $1.33 per serve
  • The Honeycrisp Apple was $1.68 and we used half, or 84c per serve
  • Add 50c per serve for the Dressing Ingredients.

The Pork reheated well and worked together with the Salad to make an enjoyable meal for $4.27 per serve.

Jun 26: Grazing Dinner

Lunch

Today was a Reuben inspired Ham, Gouda and Sauerkraut toasted sandwich.

  • Dave’s Killer Bread is 74c per serve
  • Gouda is 34c per serve
  • Ham is 92c per serve
  • The Sauerkraut adds 47c per serve.

A tasty sandwich for $2.47 per serve.

Dinner

We had a “grazing” dinner with Delice deBourgogne, Chorizo, Smoked Cheddar, Grapes, Duck Mousse Pate and a few other things. Hard to calculate a price but estimate about $8.00 per serve.

Jun 25: Sous Vide and Seared Duck Breast on Black Rice with Garlic Bok Choy

Lunch

It was time for a Nashville Hot Chicken Sandwich from Skewers, so we indulged in our favorite sandwich for $11.85 per serve with a shared Fries.

Dinner

For tonight’s Duck Breast we reverted to our classic Asian flavors and served on Black Rice flavored with Hoisin Sauce and Garlic Bock Choy.

  • The Duck Breasts were $14.44 or $7.22 per serve
  • Black Rice adds 34c per serve
  • Hoisin Sauce adds 30c per serve
  • Bok Choy adds another 48c per serve.

We could have added more Hoisin Sauce to the Rice, but overall, a very tasty meal for $8.34 per serve.

Jun 24: Branzino on a bed of Arugula with Ricotta and Lemon Zest Ravioli

Lunch

We had Smoked Trout Scrambled Eggs on Toast.

  • A slice of Dave’s Killer Bread is 37c
  • Two Pastured Eggs are $1.00
  • We shared a $3.49 can of Smoked Trout, or $1.75 per serve
  • Arugula adds 30c per servve.

A flavorsome Scrambled Egg for $2.40 per serve.

Dinner

A simple meal of Branzino on a bed of Arugula with Ricotta and Lemon Zest Ravioli.

  • The Branzino (an ocean going version of Striped Bass) was $4.39 per serve
  • The Pasta was $3.69 or $1.85 per serve
  • Arugula adds 45c per serve
  • Add 30c per serve for Butter.

The Branzino was perfectly cooked and had a mild flavor, and matched perfectly with the Ravioli to make a decent meal for $6.99 per serve.

Jun 23: Warm Shredded Lamb Salad with Pita and a Lettuce, Cucumber, Preserved Lemon, Pistachio and Mint Salad

Soutzoukakia in Sun-dried Tomato Wraps with salad.

  • The Sun-dried Tomato Wrap is $1.00 per serve
  • We shared a $3.33 serve of Soutzoukakia, or $1.67 per serve
  • Add 30c for other ingredients.

A tasty wrap for $2.97 per serve.

Dinner

We still had one serve of Shredded Lamb in the freezer so serve it as Jun 23: Warm Shredded Lamb Salad with Pita and a Lettuce, Cucumber, Preserved Lemon, Pistachio and Mint Salad.

  • The Lamb was $21.01 or $2.10 per serve
  • Mint was free
  • Add 15c per serve for unfiltered Pomegranate juice
  • Add 30c for Onion and seasoning
  • The Lettuce was $1.49 and we used half, or 38c each
  • Cucumber was $2.69 and we used half, or 68c per serve
  • Add 15c for Dressing ingredients
  • Add 20c for Preserved Lemon
  • Add 46c for Hummus.

This is a meal where every component balances each other. Definitely good eats for $4.52 per serve.

Jun 21: The Country Deli

Lunch

We decided to stuff a par-baked Ciabatta with Speck and Arugula and finish in the Panini press until hot and toasty.

  • The Ciabatta is 58c per serve
  • The Speck was $3.99, or $2.00 per serve
  • Add 20c for Arugula
  • Add 40c for Duke’s Mayonnaise.

A very tasty sandwich for $3.18 per serve.

Dinner

This week is completely jumbled! Meatless Monday will come on Wednesday and our “Thursday night data night” meal moved to Tuesday! Anyway, back to our hacked Country Deli Skit Steak Dinner.

The Marinated Skirt Steak Dinner is $36.20 with tax and tip and three Pastured Eggs add $1.50, split over two plates it’s $18.85 per serve. Tonight’s serve – allegedly for one – would have comfortably served three people. We trashed quite a lot of Sautéed Vegetables and Home Fries even after eating more than our fill!

Jun 20: Caramelized Ginger Pork and Coleslaw Wraps

Lunch

For lunch we tried Hummus and Chickpeas with Pita Chips, because Foodie Greg found a small can of Chickpeas that seemed a little better than usual.

  • Add 60c for Hummus
  • The canned Chickpeas were $1.99 or $1.00 per serve
  • Lemon Juice came from Lemons from our garden
  • Pita Chips add 60c per serve.

The meal was filling but without much variety for $2.20 per serve.

Dinner

We swapped our Meatless Monday for Caramelized Ginger Pork with an Asian Coleslaw in Lettuce Wraps.

  • The ground pork was $5.99 and we’ll get four serves from that, or $1.50 per serve
  • Add 40c for ginger, shallot, garlic and chili, etc
  • Add 30c for Coleslaw Mix
  • Lettuce adds 30c per serve
  • Dressing ingredients add 40c per serve
  • Mint came from our garden.

This is a good application for the Caramelized Ginger Pork for $2.90 per serve.

Jun 19: Cubano Sandwich with Plantain Chips

Being a Sunday we took a little extra time and had a brunch inspired by an English Breakfast.

  • The Giant Baked Beans are $1.99 or $1.00 per serve
  • Eggs are 76c per serve
  • Bacon was $4.99 and we used four of 10 slices, or $1.00 per serve
  • Add 40c for Cherry Tomatoes.

A pretty tasty brunch for $3.16 per serve.

Dinner

With left over Roast Pork the obvious solution is a Cubano Sandwich accompanied by some Plantain Chips.

  • We shared a full serve of the Pork or $1.60 per serve
  • Ham is 92c per serve
  • A slice of Gouda is 34c
  • Sandwich Pickles are $4.29 for the jar, but we used less than 10%, or 21c per serve
  • The Brioche Bagel is 58c per serve
  • Plantain Chips were $1.70 and we used 1/4, or 21c per serve.

A very tasty sandwich for $3.86 per serve.
