Apr 22: Shin Ramen Bowl; Smoked Baby Back Ribs with Coleslaw and Pinto Bean and Andouille Stew

Lunch

A gray old day made hot noodles an attractive proposition. A pack of four Shin Noodle Bowl was $3.69 or 93c per serve ($1.23 with vegetable), which proved to be quite generous and a satisfying – if spicy hot – meal. We do, however, only use one of the two flavor pouches.

Dinner

We put our stove top smoker to use and smoked up some Baby Back Ribs, which we served with Coleslaw and some of the remains Pinto Bean and Andouille Sausage.

  • The Ribs were $16.28 without discounts, or $8.14 per serve
  • The Stew is $1.24 per serve
  • The Coleslaw and Dressing add 45c per serve.

The Ribs were succulent with a hint of smoke. An excellent meal for $9.83 per serve.

Apr 21: Rissole Panini Rolls; Pinto Bean and Andouille Stew on Italian Bread topped with a Fried Egg (or two)

Lunch

With leftover Rissole, the obvious thing was to pair with Semi-dried Tomato, a little Butter Lettuce and Smokey Cheddar with a dash of Carolina BBQ Sauce.

  • The Rissole is $1.26 per half serve
  • Butter Lettuce adds 25c per serve
  • The Smokey Cheddar is 34c per serve
  • Carolina BBQ Sauce is 10c per serve
  • Semi-dried Tomato adds 30c per serve.

A pretty tasty sandwich for $2.25 per serve.

Dinner

We reheated some of the remaining Pinto Bean and Andouille Sausage Stew, and placed it over some toasted Italian Bread and topped with one or two Fried Eggs.

  • The Stew is $1.24 per serve
  • The Italian Bread loaf is $2.19 and we used about ⅓, or 37c per serve
  • Eggs are an average of 48c per serve
  • Add 10c for Chipotle Tabasco.

A tasty, filling and warming meal for $2.19 per serve.

Apr 20: Ham & Coleslaw, Caramelized Onion Hummus & Onion Sprouts; Sous Vide Shrimp with Japanese Fried Rice

Lunch

We had a little Coleslaw remaining from our Mr Fish & Chips purchase, which we added to Deli Ham. On our other sandwich we slathered Caramelized Onion Hummus with Onion Sprouts.

  • The Dave’s Killer Bread is 74c per serve
  • The Coleslaw adds 35c per serve
  • Black Forest Ham is $3.29 per pack, or 66c per serve
  • Caramelized Onion Hummus adds 73c per serve
  • Add 30c for Sprouts.

Decent (half) sandwiches for $2.78 per serve.

Dinner

A return to sous vide Shrimp with Japanese Fried Rice for a quick and simple mid-week meal.

  • Japanese Style Fried rice comes from Trader Joe’s and is $3.29 or $1.65 per very generous serve
  • 1 lb of shrimp is $10.99 and we used half,  or $2.75 per serve.

Tasty and filling for $4.40 per serve.

Apr 19: Smoked Salmon Bagel; Southwest Chopped Salad

Lunch

There was still Smoked Salmon so we made two more Bagels, with Neufchatel, Semi-dried Tomato & Shallot Sprouts on a Brioche Bagel.

  • The Brioche Bagel is 58c
  • The Smoked Salmon pieces were $1.38 per serve
  • Add 20c for Neufchatel
  • Add 40c for Shallot and Capers
  • Add 30c for Semi-dried Tomato.

As always a tasty and indulgent sandwich, for $2.86 per serve, leaving us with Smoked Salmon left over.

Dinner

For Meatless Monday we prepared a Southwest Chopped Salad Kit and served with half an Avocado each.

  • The Southwest Chopped Salad kit from Aldi was $2.99 or $1.50 per serve
  • An Avocado is 49c or 25c per serve.

A reasonably tasty meal for $1.75 per serve, but not pretty enough to photograph.

Apr 18: Nashville Hot Chicken Sandwich; Rissole with Australian-style Salad

Lunch

We had a trip to pick up blocks, and decided to have Naan Pockets from Skewers, until we remembered they had that Nashville Hot Chicken Sandwich we’d enjoyed so much. The Foodies quickly changed their mind and had the Chicken Sandwich, with Fries, for $8.75 per serve.

Dinner

With the warmer weather, it was time to grill Rissoles outdoor, although we ended up eating inside. We served with an Australian-style Salad of Lettuce, Pickled Beets, Caramelized Onion Cheddar, and Semi-dried Tomatoes.

  • Grass Fed Ground Beef is $4.99 or $1.87 per serve
  • Instead of Panko breadcrumbs, we crumbed four slices of Daves’s Killer Bread at $1.48 or 50c per serve
  • A Pastured Egg is 34c or 11c per serve
  • The onion is 4c per serve
  • Butter Lettuce was $1.49 or 38c per serve
  • Semi-dried Tomatoes add 45c per serve
  • Pickled beets in vinaigrette are $1.69, of which we used about ⅓ or 28c per serve
  • We used about ⅓ of the $5.75 Caramelized Onion Cheddar, or 96c per serve
  • Add 10c for Carolina BBQ sauce.

The new supply of Ground Beef is a finer grind, which makes for a lighter texture in the Rissoles. These turned out well for $4.69 per serve.

Apr 17: Chipotle Turkey Bacon Meatloaf with Coleslaw on a Hot Panini Roll; Cuban-style Roast Pork, Cuban Black Beans, Plantain Chips

Lunch

With some Meatloaf left, we repeated the hot Panini Roll, but with Mr Fish & Chips’ Coleslaw.

  • The Panini Roll is 63c per serve
  • The Meatloaf is $2.53 per full serve, or $1.27 per lunch serve
  • The Coleslaw adds 45c per serve
  • Garlic Spread adds 30c per serve.

Very tasty, as always, for $1.96 per serve.

Dinner

It’s been a while since we stopped our meat box delivery, so this is the first time we’ve purchased a Boston Butt from Whole Foods. Obviously we used it to cook Cuban-Style Roast Pork with Mojo Sauce. We did tonight and served with Cuban Black Beans and Jerk Plantain Chips.

  • The Pork Butt was around $9.18 or $4.59 per serve
  • Navel Oranges were $3.83 or 96c per serve
  • Limes were $2.45 or 62c per serve
  • Plantain Chips were $1.70 and we used half, or 85c per serve.
  • The Black Beans are $1.99 or $1.00 per serve.

We totally over-indulged on the Pork, finishing 1.8 lbs at tonight’s meal! We probably should have fed four, but this meal is so tasty, it’s hard to stop. A great meal for $8.02 per serve.

We have had Pinto beans soaking overnight and today Foodie Greg turned them into a Pinto Bean and Andouille Sausage Stew.

  • The pinto beans were $1.19 or 15c per serve
  • The pepper was $1.12 or 14c per serve
  • The fire roasted tomatoes were $1.29 or 16c per serve
  • The bacon was $7.99 but we used ⅜ or 38c per serve
  • The sausage was $8.99 or $1.25 per serve
  • Add 35c per serve for Onion spices and seasoning
  • Add 30c for Greek Yoghurt.

It’s more of a chili than a stew, but it was very tasty for $2.73 per serve.

Apr 15: Fried Scallop, Fries & Coleslaw; Korma Mussels with Naan

Lunch

During our weekly shopping trip to Aldi, the Foodies picked up Fried Scallops, Fries & Coleslaw from Mr Fish & Chips for $5.19 per serve with tax and tip.

Dinner

We tried a Korma Simmer Sauce from Aldi to go with our Mussels. We added some vegetables remaining from a Tray Bake to round it out.

  • Mussels are $2.29 for the pack, or $1.15 per serve
  • The Korma Sauce was $1.99 or $1.00 per serve
  • The Naan is $1.00 per serve
  • The Tray Bake is $2.34 per serve and we shared a single serve, or $1.17 per serve.

The Korma Sauce was way too sweet for the Foodies taste. We should know better because this, while purchased from Aldi, was not “Specially Selected.” An okay meal for $4.32 per serve.

Apr 14: Chipotle Turkey Bacon Meatloaf with Coleslaw in a Hot Panini Roll; The Country Deli

For lunch we reheated half the remaining Chipotle Turkey Bacon Meatloaf and stuffed it in a hot Panini Roll with Coleslaw.

  • The Panini Roll is 63c per serve
  • The Meatloaf is $2.53 per full serve, or $1.27 per lunch serve
  • The Coleslaw and Dressing add 45c per serve
  • Garlic Spread adds 30c per serve.

A very tasty roll for $2.65 per serve.

Dinner

We swapped out our Country Deli night from tomorrow to tonight, so we had the Marinated Skirt Steak Dinner. While intended for one, this makes a generous meal for two. We split the meat evenly. Foodie Greg got the Vegetable side, while Foodie Philip got the Home Fries and three home-added Fried Eggs. With tax, tip and Eggs it was $16.65 per serve.

Apr 13: Steak & Stout Pie; Potato Soup with Garlic Naan

Lunch

A cold, gray day called for a hearty Meat Pie and fortunately Foodie Greg was shopping at Trader Joe’s this morning, so we each had a Steak and Stout Pies for $3.25 per serve.

Dinner

A last minute change of plans had us heating up some Aldi Potato Soup and serving with a Garlic Naan.

A filing and satisfying meal for $2.00 per serve, but not worth photographing!
