Feb 17: Mushroom and Red Wine Meatloaf with Outside In Stuffed Gnocchi

Lunch

We chose a simple lunch of Shin Ramen with Coleslaw Mix for $1.63 per serve.

Dinner

We fried off some of the remaining Mushroom and Red Wine Meatloaf and prepared some frozen “Outside In” stuff Gnocchi.

  • The Meatloaf is $2.22 per serve
  • The Stuffed Gnocchi was $3.29 or $1.65 per serve.

The Gnocchi was decent, without being particularly flavorsome. Overall, a decent meal for $3.87 per serve.

Feb 16: The Country Deli

Lunch

We decided on a Hummus Salad Sandwich on a Ciabatta Roll.

  • The Ciabatta Roll is 58c per serve
  • Add 35c for Hummus
  • Add 30c for Pickled Beetroot
  • Add 20c for Salad Greens.

This turned out pretty well for $1.43 per serve.

Dinner

Time to revisit out ‘hacked’ Marinated Skirt Steak with Home Fries and Sautéed Vegetables, to which we added three Eggs for Foodie Philip. Even split this is a big meal.

  • The Marinated Skirt Steak Meal is $36.21 with tax and tip, or $18.11 per serve
  • Pastured Eggs are 38c each, or 57c per serve.

An excellent meal for $18.68 per serve.

Feb 15: Smokey Cheese and Pumpkin Slice (a.k.a. Hebrew Temptation)

Lunch

The weather took a cold turn, so we turned to Trader Joe’s Spanakopita for $3.99 or $2.00 per serve.

Dinner

It has been a while, but tonight we returned to our savory cake: the Smokey Cheese and Pumpkin Slice. I told the story of how it became known as Hebrew Temptation earlier and the recipe is there too. It makes four generous serves.

  • The bacon was $6.99 for 12 slices, and we used five, or 73c per serve
  • Five pastured eggs at 48c each is $2.40 or 60c per serve
  • A small bag of organic flour is $2.69 and we used about 1/3 or 23c per serve
  • Precut Butternut Squash was $1.79 and we used half, or about 45c per serve
  • The Smoked Gouda was $2.99 or 75c per serve.
  • An onion adds 8c per serve
  • The side Salad adds 60c per serve.

There was slightly less Squash in the precut pack, so the serve was a little more dense, but still within acceptable range for a rather dense cake. We filled out the meal with a simple Salad. A very tasty meal for $4.09 per serve.

Feb 14: Stir-fry Noodles with Peanut Sauce

Lunch

Since we had Smoked Salmon remaining from our Friday night Pizza, we made Smoked Salmon Bagels./

  • The Brioche Bagel is 58c
  • The Smoked Salmon pieces were $1.38 per serve
  • Add 20c for Neufchatel
  • Add 60c for Cucumber, Semi-dried Tomatoes , Onion Sprouts & Capers.

An excellent lunch for $2.76 per serve.

Dinner

A Soba Stir-fry with Peanut Sauce makes a great Meatless Monday.

  • Soba Noodles are $3.29 and we used about ⅓ or 55c per serve
  • The peanut butter was $1.99 and we used about 1/2,  or 50c a serve
  • Add 45c for Coleslaw Mix
  • Add 50c for Ginger, Onion and other ingredients.

This simple recipe exceeded expectations for $2.00 per serve.

Feb 12: Warm Shredded Lamb on Hummus with Pita Chips, and a Lettuce, Cucumber, Preserved Lemon and Mint Salad

Lunch today was a toasted Ham, Cheese and Tomato Sandwich.

  • Dave’s Killer Bread is 74c per serve
  • Breakfast Ham is 60c per serve
  • Gouda is 34c per serve
  • Add 40c for Salad ingredients.

A classic sandwich for $2.08 per serve.

Dinner

Foodie Greg found a butterflied Lamb Shoulder on special at Whole Foods, so we “unfashionably” over cooked it and shredded the Lamb, where we’ll get 10 serves. tonight we placed the Shredded Lamb on Hummus and topped it with some Pomegranate Seeds and served with Pita Chips.

We served with a side Salad of Lettuce, Cucumber, Preserved Lemon and Mint.

  • The Lamb was $21.01 or 2.10 per serve
  • Mint was free
  • Add 15c per serve for unfiltered Pomegranate juice
  • Add 30c for Onion and seasoning
  • The Lettuce was $1.49 and we used half, or 38c each
  • Cucumber was $2.69 and we used half, or 68c per serve
  • Add 15c for Dressing ingredients
  • Add 20c for Preserved Lemon
  • The Pomegranate was $2.69 and we used half, or 68c per serve
  • Add 46c for Hummus.

The astringent tartness of the Pomegranate Juice cuts through the luscious fattiness of the Lamb, giving it balanced. Served by scooping a Pita Chip through the Lamb and Hummus it’s a tasty bite. The freshness in the Salad gives the whole meal balance, for $5.10 for each very generous serve.

Feb 11: Smoked Salmon Pizza with Pickled Beets and Preserved Lemon

A simple Salad Sandwich on a Brioche Bagel.

  • The Brioche Bagel is 58c per serve
  • Garlic Spread adds 40c per serve
  • Hummus adds 42c per serve
  • Salad ingredients add 40c per serve
  • The Breakfast Ham is 60c per serve.

The toasted Bread adds a crunchy texture while the Breakfast Ham is the perfect size for a Ham Salad Sandwich at $2.40 per serve.

Dinner

An unseasonable heat wave made grilling and eating a Smoked Salmon Pizza outside practical.

  • Sockeye Smoked Salmon pieces were $5.49 or $2.75 per serve
  • The Pizza Dough was $1.49, or 75c per serve
  • We used semi-dried Cherry Tomatoes for 60c per serve
  • About two ounces of Neufchatel went on each Pizza, or 25c per serve
  • Preserved Lemon adds 5c per serve
  • Pickled Beets adds 15c per serve.

When we get the crust crisp, without being burnt, and a fully cooked interior, topped with flavorsome ingredients, it transcends the ingredients to make the perfect pizza, although very non-traditional. The Pickles bring a sharp contrast to the Pizza, which sets it off perfectly. As always, an indulgent and tasty meal for $4.55 per serve.

Feb 10: Sous vide Pork Chop with Farro and Apple Salad

Lunch

We chose a simple lunch of Shin Ramen with Coleslaw Mix for $1.63 per serve.

Dinner

Foodie Greg found some very nice looking Pork Chops, which we sous vide to a perfect medium and served with a Farro and Apple Salad. We left out the Pine Nuts.

  • With all discounts, the Pork Loin Chops were $6.20, or $3.10 per serve, for a generous 11oz per serve
  • The Apple adds 34c per serve
  • The farrow was $1.79 for the pack, but we shared ⅓ or 10c per serve
  • Spinach adds 30c per serve
  • Pomegranate Seeds were $4.99 and we used about half, or $1.25 per serve
  • Add 25c for Cuban Seasoning for the sous vide.

We seared off the fat to render it and to give it golden sheen. A quick, one minute sear on the meat gave it color and a little flavor from the Butter solids. The Apple and Pomegranate’s sour and sharp flavors complemented the Pork nicely. A very generous and satisfying meal for $5.45 per serve.

Feb 9: Vegetable Frittata

Lunch

For a different type of lunch, we heated the remaining Quick Moussaka and served on a slice of toasted Dave’s Killer Bread.

  • The Dave’s Killer Bread is 74c per serve
  • The Quick Moussaka has been already accounted.

A pretty good meal for 74c per serve.

Dinner

We took the remaining Tray Bake and turned it into a Frittata.

  • Two Pastured Eggs are 76c per serve
  • The Tray Bake is 82c per serve
  • Add 20c for seasoning.

A quite enjoyable meal for $1.88 per serve.

Feb 8: Red Wine and Mushroom Meatloaf with Sweet Potato Tray Bake

We did a simple Salad Sandwich between toasted Bread slathered with Garlic Spread on one side and Hummus on the other.

  • Salad ingredients add 40c per serve.

The Garlic/Hummus combination worked way better than expected for a very flavorsome sandwich for $1.96 per serve.

Foodie Greg’s favorite Meatloaf: Red Wine and Mushroom. Tonight we served with a Sweet Potato Tray Bake with Onion, Garlic Cloves and Bell Peppers.

  • The grass fed Ground Beef was from Aldi for $5.49 per pound, or 92c per serve
  • Baby Bella mushrooms were $1.99 or 34c per serve
  • Onions and garlic add 5c per serve
  • Two medium eggs are 64c or 11c per serve
  • The butter is $3.99 per block, and we used about 3/8 for four serves, or 25c per serve
  • Red wine adds $1.00 or 13c per serve
  • Add 10c for Worcestershire sauce and other spices per serve
  • The Murasaki Sweet Potato was $3.99 for 10, or 40c per serve
  • Onion and Garlic add 10c per serve
  • Bell Peppers add 32c per serve.

While it’s very tasty, the Meatloaf is hard to photograph, but the combination of flavors is very appealing. The Tray Bake is a good Winter side, and contributes to a very enjoyable meal for $3.04 per serve.
