Jan 25: Apple & Delice de Bourgogne on a Brioche Bagel; Baked Halloumi Tostadas

Today’s lunch was a direct copy of yesterdays Apple & Delice de Bourgogne on a Brioche Bagel for $1.68 per serve.

Dinner

For Meatless Monday we prepared Baked Halloumi, Guacamole, Bell Peppers, Sprouts with Roast Pepper Salsa.

  • The Halloumi was $5.99 or $3.00 per serve
  • Guacamole is $1.10 per serve
  • Bell Peppers are 32c per serve
  • Tostados were $1.39 for 21, or 10c per serve
  • Add 10c for Roasted Pepper Salsa.

These were pretty tasty for $4.62 per serve.

Jan 24: Apple & Delice de Bourgogne on a Brioche Bagel; Sous Vide Ham with Choucroute

Lunch

Foodie Greg had found some Delice de Bourgogne – a Triple Cream Cheese in the Brie family – and we paired it with Apple on a Brioche Bagel.

  • The Brioche Bagel is 58c
  • The Delice de Bourgogne was $5.38 and we used about ⅓, or 90c per serve
  • Apple adds 20c per serve.

The Delice de Bourgogne was stunning, and made an excellent sandwich for $1.68 per serve.

Dinner

Before they sold out, we picked up another ‘on special’ Ham from Aldi and today we sous vide it to perfection and paired with Choucroute. We made a Dressing from Trader Joe’s Blue Cheese Mustard and Raw Honey.

  • The Ham was $5.38, or about 27c for an 8oz serve
  • Carrots were 51c, or 26c per serve
  • The Sauerkraut was $4.99 and we’ll get four serves of the Choucroute, or $1.25 per serve
  • Fingerling Potatoes were 34c per serve
  • The Dressing ingredients add 70c per serve.

A very filling, and tasty meal. The Dressing was a success, contributing to a very filling and tasty meal for $2.92 per serve.

Jan 23: Chorizo, Bell Pepper & Smokey Cheddar; New England Baked Beans with Bacon and Fried Eggs

Lunch

We had some Chorizo on hand, so we added Smokey Cheddar and Roasted Bell Pepper to make a great melt.

  • Dave’s Killer Bread is 74c per serve
  • Smokey Cheddar is 68c per serve
  • The Chorizo was $5.38 after all discounts and we used half, or $1.35 per serve
  • Add 50c for Garlic Spread
  • Fire Roasted Peppers cost $1.99 and we used half, or 50c per serve.

The flavors blended to create something completely new and unexpected, in a good way, for $3.77 per serve.

Dinner

Tonight we tried a new recipe for New England Baked Beans, to which we added some Bacon and Fried Eggs.

  • Pinto Beans were $1.29 and we used half or 16c per serve
  • Bacon is $6.99 and we used about ⅓, or 58c per serve
  • Add 80c per serve for other ingredients
  • Dave’s Killer Bread is 33c per slice
  • Two Eggs add 96c per serve.

This is a very simple recipe, and we had to boil it down to the right consistency, but it generated a lot of flavor for $2.83 per serve.

Jan 22: Turkey Bacon Chipotle Meatloaf with Smokey Cheddar on a Hot Panini Roll; Salsa Simmered Cod with a Tostada and Mixed Greens

For lunch we repeated yesterday’s success: the Turkey Bacon Chipotle Meatloaf with Smokey Cheddar on a Hot Panini Roll for $2.57 per serve.

Dinner

Being Fishy Friday we chose Salsa Simmered Cod – mostly to give the Cod some flavor!

  • The cod fillets were six for $12.99 or $2.17 per serve
  • The Salsa was $1.95 or 98c per serve
  • Tostados were $1.39 for 21, or 13c per serve
  • The Dressed Mixed Greens add 45c per serve.

Thanks to a very tasty Salsa, this turned out pretty well for $3.73 per serve.

Jan 21: Turkey Bacon Chipotle Meatloaf with Smokey Cheddar on a Hot Panini Roll; Black Pepper Beef

Dinner

We took half the remaining Turkey Bacon Chipotle Meatloaf, topped with Smokey Cheddar and heated it with two Panini Rolls.

  • The Panini Roll is 63c per serve
  • The Meatloaf was $2.53 per dinner serve, or $1.27 per lunch
  • The Smokey Cheddar is 34c per serve
  • Add 30c for Mayo and Chipotle Pepper Sauce.

An extremely tasty roll for $2.57 per serve. We think it was the Mayo that tripped it toward a Burger flavor profile.

Dinner

A return to a favorite: Black Pepper Beef.

  • The top sirloin was $3.52 per serve
  • Bell Peppers were 48c per serve
  • Chipotle powder adds 10c per serve
  • Onion and garlic add 25c per serve
  • Brown Rice adds 33c per serve
  • Add 50c for the other ingredients.

It’s a pretty decent stir-fry for $5.18 per serve.

Jan 20: Smoked Salmon Bagel; Chapli Kebab Dinner

With Smoked Salmon left over from our Pizza, we went classic and did a Brioche Bagel with Smoked Salmon, Neufchatel, Capers, Shallot and Semi-dried Cherry Tomatoes

  • The Brioche Bagel is 58c
  • The Smoked Salmon was $1.38 per serve
  • Add 20c for Neufchatel
  • Add 20c for Shallot and Capers
  • Add 30c for Tomatoes.

Who can ever complain about a Smoked Salmon Bagel! Delicious for $2.66 per serve.

Dinner

As we were running of our Powerwalls during a PSPS blackout, we decided to bring in dinner from Skewers Halaal, where we both had the Chapli Kebab Dinner for $14.22 per serve, with tax and tip.

Jan 18: Branston Pickle & Chedder, Hummus & Sprouts; Shepherds Pie

A simple lunch of two shared sandwiches: Branston Pickle & Chedder, Hummus & Sprouts.

  • The Aldi Bread is 53c per serve
  • Branston Pickle adds about 40c per serve
  • The Cheddar was from Aldi was $3.59 and we shared about 1/3, or 60c per serve
  • Add 30c for Sprouts
  • Add 30c for Hummus.

A satisfactory lunch for $2.13 per serve.

Dinner

Tonight we turned to Shepherd’s Pie, swapping our Meatless Monday soup to tomorrow where we anticipate being without Grid power and want to avoid using an oven. Plus, we still had that Mashed Potato to use.

We’ve mostly done Cottage Pie – the beef version of a Shepherd’s Pie – but a true Lamb Shepherd’s Pie is a warm, filling dish. We get four serves.

  • The Ground Lamb is $5.99 or $1.50 per serve
  • The Bob Evans Mashed Potato was $2.95 and we used the remaining ⅔, or 25c per serve
  • Add 35c for carrot, onion and celery
  • Beef stock is $1.99 but we used ¼ or 13c per serve
  • Add 20c per serve for butter
  • Add 30c per serve for flour and seasonings.

Foodie Philip may have had more than one serve, because this Shepherd’s Pie turned out to be very tasty. Unfortunately it was not a pretty plate, so no photo was taken. An ugly, but very tasty meal for $2.73 per serve.

Jan 17: Soutzoukakia with Hummus in a Panini Roll; Chipotle Turkey Bacon Meatloaf with Mashed Potatoes, Sautéed Green Beans and Mushrooms, Mashed Potato and Turkey Gravy

Today’s lunch was almost a repeat of yesterdays, but with Hummus instead of Tabouli.

  • Soutzoukakia is $3.99 per serve, and we shared a half serve, or $1.00 each
  • A Panini Roll is 63c
  • The hummus is 25c per serve.

Again a very tasty lunch for $1.88 per serve.

The last time we had this meatloaf, the Foodies wrote:

The worst thing about ground turkey is that it is lacking in fat. This is considered a virtue by those who got the (completely wrong) message that there is something wrong with fats. But, add enough bacon to bring the combined result to 85% lean, 15% fat, and you have a winner.

We created this recipe, with the addition of half a can of chipotle and it’s pretty good. Tonight’s result was particularly light in texture and made four serves.

  • Ground turkey cost $3.59 or 90c per serve
  • Bacon adds 60c per serve
  • A can of chipotle is $1.50 and we used half, or 38c per serve
  • Add 65c for onion, breadcrumbs and seasonings
  • The gravy was $1.69 or 80c per serve (we used it all)
  • The Bob Evans Mashed Potato was $2.95 and we used ⅓, or 49c per serve
  • Mushrooms and Beans add 85c per serve.

A really satisfying Meatloaf and, generally, comfort food for $4.67 per serve.

Jan 16: Soutzoukakia with Tabouli in a Panini Roll; Rack of Lamb with Grapefruit and Pomegranate Salad

We split the remaining Soutzoukakia and served in a hot Panini roll with Tabouli.

  • Soutzoukakia is $3.99 per serve, and we shared a half serve, or $1.00 each
  • A Panini Roll is 63c
  • The Tabouli is $2.99 and we served half, or 36c per serve.

A very, very satisfactory lunch for $1.99 per serve.

Dinner

Tonight’s sous vide (and seared) Rack of Lamb was served with a Grapefruit and Pomegranate Salad and Dolmas.

  • For $22.13 we got 2.25 lbs of Rack of Lamb that we split into four 9oz (approx) serves for $5.53 per serve
  • We shared half a 99c Pomegranate for 25c per serve
  • We shared a $1.29 Grapefruit for 65c per serve
  • Mint came from our garden.
  • Stuffed Eggplant Dolmas were $1.79 or 60c per serve.

We tweaked our sous vide temperature up a degree, and that made the texture much more pleasant. As always an excellent meal, for $7.03 per serve.
