May 28: Rissole, Tomato & Smoked Cheddar Roll; Rib Eye with Steak Fries, Side Salad and Blue Cheese Butter

For lunch we heated a Rissole each and put it in a hot Panini Roll with Smoked Cheddar and Tomato.

Dinner

Thursday night’s steak was a Rib Eye served with Garden Salad and Steak Fries.

  • The Rib Eye from our Keller Crafted meat box is around $8.41 per serve
  • The Steak Fries were $1.65 and we used about half, or 42c per serve
  • Spinach adds 35c per serve
  • The cherry tomatoes were $2.99 and we used 1/4 or 38c per serve
  • Add 15c for dressing ingredients.

A tasty meal for $9.71 per serve.

May 27: Ham & Smokey Cheddar Bagel; Bratwurst with Apple Bacon Slaw

Lunch

For variety we did a Smokey Cheddar and Deli Ham Bagel with Tomato.

  • The Brioche Bagels are $2.89 for five, or 58c per serve
  • Smokey Cheddar adds 36c per serve
  • The Ham is $3.29 per pack and we used 1/6 per Bagel, or 55c per serve
  • Five Kumato were $3.49 and we had one each, or 70c per serve
  • Add 40c for Garlic Spread.

The Brioche Bagels make a decent sandwich for $2.59 per serve.

Dinner

After enjoying the Aldi Beer Bratwurst recently we decided to try their regular version, again with Apple Bacon Slaw.

  • Bratwurst were $4.49 or $2.25 per serve
  • Bacon was $4.99 and we used four of 10 slices, or 50c per serve
  • The Endive was $2.69, or $1.35 per serve
  • The Apple was $1.38 or 35c per serve
  • Add 20c for apple cider vinegar and seasoning.

We decided we preferred the Beer Bratwurst as there’s an element in the regular Bratwurst spicing that we didn’t particularly like. The Endive brings more flavor, and bitterness, than the Nappa Cabbage. Still a good meal for $4.65 per serve.

May 26: Gyro; Rissoles with Beets, Tomatoes and Caramelized Onion Cheddar

Lunch

A shopping trip had us near our favorite Gyro outlet New York Chicken and Gyro where we picked our Gyros for $8.17 per serve with tax and tip.

Dinner

While we loved our regular Rissole recipe, tonight we decided to try a version that had cooked rice instead of breadcrumbs as the primary binder.

  • Dry aged 85/15 ground beef $8.57 or $2.86 per serve
  • A cup of cooked rice is 34c or 11c per serve
  • A large egg is 23c or 7c per serve
  • The onion is 4c per serve
  • Spinach was $1.49 or 38c per serve
  • The cherry tomatoes were $2.99 and we used half or 75c per serve
  • Pickled beets in vinaigrette are $1.69, of which we used about ⅓ or 28c per serve
  • We used about ⅓ of the $5.75 Caramelized Onion Cheddar, or 96c per serve
  • Add 10c for Carolina BBQ sauce.

The Rice was a failure as a binder, but the Rissoles were tasty enough. A good meal for $5.55 per serve.

May 25: Smokey Cheddar & Tomato, Smoked Tuna & Capers; Crispy Rice Bowl with Spring Vegetables and a Fried Egg

Two simple sandwiches for lunch today: Smokey Cheddar & Tomato on one, Smoked Tuna and Capers on the other.

Tonight we tried something different for our Meatless Monday: Crispy Rice Bowl with Spring Vegetables.

  • A Large Egg is 21c per serve
  • Peppers were 24c per serve
  • Add 45c for other vegetables.

A quite tasty dinner for $1.23 per serve.

May 24: Egg in a Bagel; Black Pepper Beef

Lunch

We repeated our Egg in a Bagel Hole, but today with an Everything Bagel from Aldi.

  • The Everything Bagels are $1.99 for six, or 33c per serve
  • Large Eggs are 21c each, or an average of 42c per serve
  • A small Tomato adds 31c per serve.

The combination worked well with the Bagel toasted first. Not bad for $1.06 per serve.

Dinner

Tonight we returned to the Black Pepper Beef Stir Fry and served with Brown Rice.

  • The top sirloin was $3.52 per serve
  • Bell Peppers were 48c per serve
  • Chipotle powder adds 10c per serve
  • Onion and garlic add 25c per serve
  • Brown Rice adds 33c per serve
  • Add 50c for the other ingredients.

A very enjoyable stir-fry for $5.18 per serve.

May 22: Mushroom Pot Roast in Panini Roll; Cod à la Nage

We repeated the Mushroom Pot Roast in a hot Panini Roll.

Dinner

For this week’s Fishy Friday, we returned to Thai-Style Cod à la Nage with Edamame.

  • The cod fillets were six for $12.99 or $2.17 per serve
  • Coconut milk was $1.89 or 95c per serve
  • Limes were 68c or 34c per serve
  • A Onion works out at 21c per serve
  • Add 55c per serve for fish sauce, garlic, chili, ginger and seasoning.

The poached cod was tender and flakey, with a very flavorsome broth that wasn’t overly spicy for $4.12 per serve.

May 21: Cheddar & Kumato, Avocado & Lemon Pepper Tuna; Lamb Loin Chops with Raspberry Feta Salad

Today we turned to sandwiches for lunch. We shared a Cheddar & Kumato sandwich, and an Avocado & Lemon Pepper Tuna sandwich.

Although it’s Thursday Night Steak Night, we did Lamb Loin Chops and served with a Raspberry and Feta Salad.

  • Raspberries were $1.69 and we used ⅔ or the punnet, or 57c per serve
  • The French (Valbreso) Feta was $10.99 but we used 1/6 or 92c per serve
  • Add 20c for Mixed Greens
  • Add 15c for Dressing ingredients.

Tonight the Loin Chops were perfectly cooked and the Raspberry Salad was a great side. A really good meal for $7.82 per serve.

May 20: Mushroom Pot Roast in a Panini Roll; Creole Style Jambalaya

For lunch we reheated one serve of the Mushroom Pot Roast and served in a hot Panini Roll.

Tonight we returned to Creole Style Jambalaya, although we consistently leave out the chicken.

  • 10 oz of shrimp is $6.49,  or $1.63 per serve
  • Canned fire roasted tomatoes cost $1.69 or 34c per serve
  • Bell pepper was 69c or 15c per serve
  • Scallions, onion, garlic  and herbs adds 30c per serve
  • Tomato paste adds 12c per serve
  • Rice adds 33c per serve.

Tasty and filling as always for $4.37 per serve.

May 19: Smoked Trout & Neufchatel Sandwich; Mushroom Pot Roast with Farro

Lunch

When we open a can of Smoked Trout, we end up with two sandwiches the same, as we did today. We paired the Trout with Neufchatel and Garlic Spread.

Tonight we prepared Slow Cooked Mushroom Pot Roast. We will get four serves from this even though our roast is smaller and we skipped the potatoes.

  • The roast was $21.76 or $5.44 per serve
  • The mushrooms were $2.49 per pack, or 63c per serve
  • Carrots were $3.99 and we used half or 50c per serve
  • We used beef bone broth that cost $2.99 for the pack, but we used only ¼ or 19c per serve
  • The farro was $1.79 for the pack, but we shared ⅓ or 10c per serve
  • Add 10c per serve for onion and garlic
  • Add 50c per serve for seasonings.

This turned out really well. The beef was fall apart tender and meaty beefy flavor enhanced the broth. A great pot roast for $7.46 per serve.
