Apr 19: Chorizo, Onion & Pepper Frittata; Beef and Barley Pot Roast with Mushrooms

Lunch

Our Sunday lunch often revolves around Eggs, so today we chopped some Chorizo, Onions and Bell Peppers and made a Frittata with the remaining Buffalo Mozzarella.

  • Two Large Eggs are 30c per serve
  • The Chorizo was $7.99 and we used ¾ or $3.00 per serve
  • The Mozzarellas was $9.99 and we used half, or $2.50 per serve
  • Add 30c per serve for Onion, Bell Pepper and Smoked Paprika.

While a little expensive, the “clean out the refrigerator” Frittata was very tasty for $6.10 per serve.

Dinner

We had a good sized chuck roast from our Keller Crafted meat deliver, and decided to do a pot roast variation: Beef and Barley Pot Roast with Mushrooms in a pot in the oven, not on a stove top.

  • The beef was $21.22 or $5.30 per serve
  • Mixed Mushrooms were $7.99 or $4.00 per serve
  • The pearl barley is $4.89 for a 28 oz bag, or 35c per serve
  • Mushroom stock replaced the other stocks in the recipe for $3.99 or $1.00 per serve
  • Wine adds 20c per serve
  • Onion, celery and garlic add 35c per serve.

Very filling and satisfying for $11.20 per serve.

Apr 18: Baked Ham, Sauerkraut & Swiss on a Brioche Bagel; Duck Breast with Bok Choy and Yakisoba Noodles

Since we still had Ham, Sauerkraut, Swiss and Bagels we repeated our “Ham Ruben.”

  • The Brioche Bagels are $2.89 for five, or 58c per serve
  • Swiss adds 34c per serve
  • We shared a half serve of our Ham, or 32c per serve
  • The Artisanal Kraut is $3.29 per packet and we used about ⅛, or 21c per serve
  • Five Kumato were $3.49 and we had one each, or 70c per serve
  • Add 40c for Garlic Spread.

Definitely not a Bagel you’d find in a Jewish Deli, but a good sandwich for $1.85 per serve.

Dinner

Tonight we returned to the souse vidé Duck Breast that is then seared to crispen the fat. With the rendered Duck Fat we cooked some Bok Choy and served on a bed of Yakisoba Noddles.

  • The Duck was $13.75 or $6.88 per serve
  • The noodles are $3.19 for the pack, or $1.60 per serve
  • The Bok Choy was $2.99 or $1.50 per serve
  • Add 30c for Butter.

As always, the Duck is perfectly cooked, and the sides a great balance. An excellent meal for $10.28 per serve.

Apr 17: Lamb Gyro; Smoked Cod Tacos

Lunch

An essential hardware store trip takes us close to New York Chicken and Gyro where we picked our Gyros for $8.17 per serve with tax and tip.

Dinner

For tonight’s Fishy Friday we smoked some Cod fillets and served with Coleslaw from a couple of nights ago in a Taco.

  • The cod fillets were six for $12.99 or $2.17 per serve
  • The cabbage was 38c, or 13c per serve
  • Add 50c for other Coleslaw ingredients
  • The Tortillas were $3.99 and we used half, or $1.00 per serve.

These worked out really well. We got the Smoked Cod exactly right, and the Coleslaw was a great balance. Not bad for $3.80 per serve.

Apr 16: Ham, Sauerkraut & Swiss on a Brioche Bagel; Sous Vide Pork Loin with Mushroom Farro Rissotto

A different Aldi store had the Brioche Bagels for our Ham, Bavarian Sauerkraut and Melted Swiss.

Tonight we souse vidé a Pork Sirloin from our meat box to a perfect medium rare. We paired it with a Mushroom Farro Risotto.

  • The Mushrooms were $2.99 or $1.50 per serve
  • The Farro was $1.79 for the pack, but we shared ⅓ or 10c per serve
  • Add 50c for other ingredients.

With perfect Pork and a flavorsome, and filling, side, it was a great meal for $7.98 per serve.

Apr 15: Supermarket Sushi; Ham “Cobb” Salad

Lunch

A shopping trip to Whole Foods bought back Cucumber Avocado Rolls and Albacore Sushi for $10.44 per serve.

Dinner

We’ve created many variations on a Cobb Salad and tonight’s used Ham as the featured Protein.

  • We shared a serve of ham for 32c per serve
  • The Buffalo Mozzarella was $9.99 and shared half, or $2.50 per serve
  • Pastured Eggs are 51c per serve
  • Organic Spinach was $1.99 and we used about ¼ or 25c per serve
  • Bagged Baby Avocados were $2.78 for six or 46c per serve
  • The Grape tomatoes cost $1.79 or 45c per serve
  • Add 40c for Olive Oil and Balsamic Glaze.

While definitely not a conventional Cobb Salad it was very enjoyable for $4.89 per serve.

Apr 14: Baked Ham, Swiss & Bavarian Sauerkraut on an Everything Bagel; Spanish Style Meatloaf with Coleslaw

We’re on a Bagel kick at the moment. Sadly the Brioche Bagels are no longer available, so we’re buying Everything Bagels. Some of our Ham went on the Bagel, with Bavarian Sauerkraut and Melted Swiss.

Frying the Meatloaf to reheat adds a lot of flavor and texture. This was a pretty good pairing for $4.74 per serve.

Apr 13: Shin Bowl; Soy Chorizo Chili

Lunch

We picked up some Shin Noodle Bowls at Aldi and enjoyed one for lunch. A pack of four was $3.69 or 93c per serve, which proved to be quite generous and a satisfying – if spicy hot – meal.

Dinner

For today’s Meatless Monday we reheated the final two serves of the very good Soy Chorizo Chili from two weeks ago, for $2.24 per serve including the Avocado and Labné.

Apr 12: Baked Ham, Asparagus & Mushroom Spätzle; Ham & Green Onion Scrambled Eggs

Lunch

The Foodies decided to have their main Easter Sunday meal at lunch. We souse vidé the Ham for just over three hours, cooked some Asparagus in the Panini Press and heated some frozen Mushroom Spätzle to make an excellent meal.

  • The Ham was approximately $5.00 with discounts and we will get at least eight serves, or 63c per serve
  • The Asparagus was $1.32 and we shared half, or 33c per serve
  • Mushroom Spätzle came from Aldi for $2.99, or $1.50 per serve.

The Ham was tender and juicy. The Asparagus perfectly cooked and the Mushroom Spätzle was pretty good. An excellent lunch for $2.50 per serve.

Dinner

We had an easy, and early, dinner ahead of watching the NBC repeat of Jesus Christ Superstar, of Ham and Green Onion Scrambled Eggs on Toast.

  • Large eggs are 30c per serve
  • We shared half a serve of Ham, or 31c per serve
  • A slice of Toast is 23c per serve
  • Add 10c for Green Onion.

A quick, simple and tasty meal for 94c per serve.

Apr 11: Ham, Kumato & Swiss on a Brioche Bagel; Spanish Style Meatloaf with Sweet Potato Halloumi Bake

We used the last of the Brioche Bagels and topped with Garlic Spread, Ham, Kumato and melted Swiss.

  • The Brioche Bagels are $2.89 for five, or 58c per serve
  • Swiss adds 34c per serve
  • The Ham is $3.29 per pack and we used 1/6 per Bagel, or 55c per serve
  • Five Kumato were $3.49 and we had one each, or 70c per serve

Another great Bagel sandwich for $2.57 per serve.

Dinner

With plenty of Ground Pork in the freezer from our meat box, it was time to make a Meatloaf, so we returned to the Spanish Style we’ve done before.

  • The pork came from our Keller Crafted meat delivery – 1 lb of ground pork cost $8.31 or $2.08 per serve
  • The Ground Turkey was $2.99 or 50c per serve
  • The Medley of Potatoes was $3.69 and we shared ¼, or 23c per serve
  • The orange bell pepper was $1.99 or 50c per serve
  • Instead of white bread we used Panko breadcrumbs at $2.99 for 16oz and we used 8oz or 37c per serve
  • An pastured egg is 51c or 13c per serve
  • Add 30c per serve for paprika, onion, garlic, thyme and seasoning
  • The Sweet Potato Halloumi Bake is $1.34 per serve.

Instead of one enormous Meatloaf we made two smaller ones to split between meals. A very decent meal for $5.45 per serve.

Apr 10: Smoked Trout Naan ‘Pizza’; Atlantic Salmon, Asparagus and Black Rice with a Piccata Sauce

Lunch

Since we had two Garlic Naan remaining, Foodie Greg turned them into a ‘pizza’ by adding Smoked Trout, Tomatoes and Shredded Gruyere.

  • The Garlic Naan was $3.49 or $1.75 per serve
  • We shared a $3.49 can of Smoked Trout, or $1.75 per serve
  • Add 50c for Garlic Spread
  • Add 90c for Shredded Gruyere
  • Add 20c for Tomatoes.

While a little ‘odd’ this turned out pretty well for $5.10 per serve.

Dinner

Tonight’s Fishy Friday was Wild Caught Atlantic Salmon, Asparagus and Black Rice with a Piccata Sauce.

  • The Salmon Fillets were $8.13 for two or $4.07 per serve
  • The Asparagus was $1.32 and we shared half, or 33c per serve
  • Black Rice is 44c per serve
  • Add 90c for the Piccata Sauce ingredients.

Salmon was perfectly cooked and the Piccata Sauce was an excellent accompaniment for $5.74 per serve.
