Aug 16: Soy Chorizo Nachos

Lunch

While hot outside we took our Ploughman’s lunch down to our picnic table.

  • The Rye Crispbread was $3.29 for a pack of 20, or 33c per serve
  • The Irish Cheddar was $3.49 and we used about 60%, or $1.05 per serve
  • Branston Pickle was $13.31 for the jar, and we used about 1/5th, or $1.33 per serve
  • Apple adds 20c per serve
  • Pickled Onion adds 10c per serve.

A tasty and varied meal for $3.01 per serve.

Dinner

We liked the Nacho’s with mixed Beef and Refried Beans, so we thought we’d try it with Soy Chorizo for a Meatless Monday. The Soy and Bean mix will make at least four serves.

  • Soy Chorizo is $2.29 or 58c per serve
  • Refried Beans are 99c or 50c per serve
  • The Corn Chips were $1.99 and we used about ⅓, or 33c per serve
  • Jalapeño Pepper adds 40c per serve
  • Add 10c for Plain Yoghurt
  • Add 40c for Guacamole.

These were tastier than the Beef version, thanks to the Chorizo’s spice. A very filling meal for $2.31 per serve.

Aug 15: Cubano Sandwich with Coleslaw

Lunch

Today we had some Yakisoba Bowls that required only hot water to reheat. They were okay for $2.54 per serve.

Dinner

With the remaining Cuban Pork we made Cubano sandwiches on Brioche Bagels, for a cultural mashup.

  • The Pork is $2.47 per serve
  • Deli Ham is 33c per serve
  • Swiss is 41c per serve
  • Bread and Butter Pickles are $4.69 for the jar, but we used less than 10%, or 23c per serve
  • The Brioche Bagel is 58c per serve
  • Add 30c for Mayonnaise
  • Add 35c for Coleslaw.

A very good sandwich for $4.67 per serve.

Aug 14: Cuban-style Roast Pork with Cuban Black Bean Salad

Lunch

We continue to prove Skewers’ Nashville Hot Chicken Sandwich is our favorite meal for $8.75 per serve, with a shared Fries.

Dinner

A welcome return to Cuban-Style Roast Pork with Mojo Sauce, tonight with a Black Bean Salad. We will get four serves from the Pork, and two from the Sauce and Salad.

  • The Pork Butt was around $9.88 after all discounts, or $2.47 per serve
  • Limes were 56c or 28c per serve
  • Grapefruit was $1.29 or 65c per serve
  • Black Beans were $2.45 and we shared ¼, or 15c per serve
  • Add 40c for other ingredients for the Beans

Unfortunately our Orange went moldy before we could use it, so tonight’s Mojo Sauce was a little sharper than it would normally be, but still a great meal for $3.95 per serve.

Aug 13: Striped Bass with Caesar Salad

Lunch

We toasted some par-baked Italian Bread, topped with Avocado, Bacon, Lettuce and Kumato and another piece of Italian Bread.

  • Italian Bread is 22c per serve
  • Pre washed Lettuce adds 30c per serve
  • Uncured Bacon was $5.99 for 10 slices, and we had two each, or $1.20 per serve
  • Add 45c for Semi-dried Tomatoes
  • Add 38c for the Avocado.

A very tasty sandwich for $2.55 per serve.

Dinner

Instead of Barramundi, which was unavailable, we had Striped Bass with Caesar Salad.

  • The Striped Bass was $4.68 per serve
  • The Caesar Salad Kit is 99c per serve
  • The preserved Lemon is from the refrigerator.

We really liked the crispy skin on the Striped Bass, which also had great texture and flavor. A simple, but satisfying, meal for $5.67 per serve.

Aug 12: Marinated Top Sirloin with Gado Gado Peanut Sauce, Vietnamese Slaw and Brown Rice Noodles

Lunch

Although we only had them last night we took the remaining rissoles and stuffed them in a hot Panini Roll with Smokey Cheddar, Carolina BBQ Sauce, and a little Lettuce.

  • The Rissole is $1.26 per half serve
  • Butter Lettuce adds 25c per serve
  • The Smokey Cheddar is 34c per serve
  • Carolina BBQ Sauce is 10c per serve.

A very tasty roll for $1.95 per serve.

Dinner

We had a Top Sirloin Steak that we marinated, seared and sliced before being laid out on top of Brown Rice Noodles, topped with Gado Gado style Peanut Sauce and served with a Vietnamese Slaw.

  • The Top Sirloin was $4.22 per serve
  • The peanut butter was $1.99 and we used about 1/2,  or 50c a serve
  • Add 30c for Sauce ingredients
  • Coconut Milk was $1.89 for the can, and we used ⅓ or 32c per serve
  • Rice noodles are $3.56 per 14oz box, we used about 1/2 of the box, or 90c per serve
  • The Vietnamese Slaw was built on a Slaw Mix for 30c per serve
  • Add 40c for Dressing ingredients.

A very satisfying meal with perfectly cooked Steak and a well balanced meal for $6.94 per serve.

Aug 11: Beef Rissoles with Australian Inspired Salad

Lunch

For lunch we picked up Enchiladas from Viva La Fiesta. Foodie Greg had the Chicken while Foodie Philip had the Green Pork Enchilada. They were both excellent again for $15.28 each with tax and tip.

Dinner

A nice return to cooking Rissoles on the outdoor grill and enjoying them with an Australian inspired Salad on the outdoor terrace under the stars.

  • Ground beef $5.99 or $1.50 per serve
  • 8 oz Panko breadcrumbs are $2.99 and we used half, or 50c per serve
  • A Pastured Egg is 38c or 10c per serve
  • The onion is 4c per serve
  • Spinach was $1.49 or 38c per serve
  • Pickled beets in vinaigrette are $1.69, of which we used about ⅓ or 28c per serve
  • We used about ½ of the $3.95 Sharp Cheddar, or 66c per serve
  • Add 10c for Carolina BBQ sauce.

A very satisfying meal for $3.56 per serve.

Aug 10: Delice de Bourgogne, Onion Sprouts, Semi-dried Tomato and Prosciutto on Italian Bread

Lunch

Today’s lunch was a taste sensation: Delice de Bourgogne, Onion Sprouts, Semi Dried Tomato and Prosciutto on Italian Bread adds up to a lot of flavors layered over each other.

  • The Italian Bread is 22c per serve
  • The Delice de Bourgogne was $5.38 and we shared ½, or $1.35 per serve
  • Add 45c for Semi-dried Tomatoes
  • Add 15c for Onion Sprouts
  • The Prosciutto ass $1.22 per serve.

A very excellent open sandwich for $3.39 per serve.

Dinner

For dinner we did a do-over of the Vietnamese Caramelized Pork Bowls with Slaw for $3.00 per serve.

Aug 9: Thai Noodle Salad with Peanut Sauce

Lunch

After spreading a toasted Brioche Bagel with Neufchatel, we topped it with a generous serve of Smoked Salmon, Capers, Tomato and Onion Sprouts.

  • The Brioche Bagel is 58c
  • The Smoked Salmon pieces were $1.38 per serve
  • Add 20c for Neufchatel
  • Add 30c for Onion Sprouts
  • Add 40c for Tomato and Capers.

An excellent sandwich for $2.76 per serve.

Dinner

We mixed two recipes: the Thai Noodle Salad, but with the Gado Gado Peanut Sauce.

  • Brown Rice Pad Thai Noodles add 85c per serve
  • Slaw mix adds 30c per serve
  • Bell Peppers add 32c per serve
  • Mango was $1.69 or 85c per serve
  • The peanut butter was $1.99 and we used about 1/2,  or 50c a serve

A surprisingly good Meatless Monday for $3.44 per serve.

Aug 8: Sous Vide Duck Breast with Bok Choy and Yakisoba Noodles

Lunch

Baked Beans on toasted Italian Bread with folded Scrambled Eggs. The folded Scrambled Eggs are sometimes referred to as “Australian Style” where the pan is heated quite hot before the eggs go in, which are quickly folded, repeatedly until almost ready, then served and “carry on” will finish the job.

  • The Italian Bread loaf is $2.19 and we used about 1/5 or 22c per serve
  • We had three Pastured Eggs each, instead of Bacon, in our Scrambled Eggs for $1.14 per serve
  • Half a can of Baked Beans is 77c per serve.

A very tasty meal for $2.13 per serve.

Dinner

Although last Sunday’s Roast Duck Legs were good, they are not as good as our sous vide Duck Breast, which we then sear extensively to get a perfectly crips skin and rendered fat.

  • The Duck was $16.48 or $8.24 per serve
  • The Noodles are $3.19 for the pack, or $1.60 per serve
  • The Bok Choy was $2.00 and we used about half or 50c per serve.

Other than unfortunately picking spicy Yakisoba Noodles, which didn’t fit the flavor profile at all, this was a tasty meal. The Duck was perfectly medium rare and the skin rendered to perfection. An excellent meal for $10.34 per serve.

Aug 7: Rack of Lamb with Raspberry, Feta and Mint Salad

Lunch

It turns out it was four weeks since we last had Skewers’ Nashville Hot Chicken Sandwich. It was also three weeks ago, and two weeks ago! But we have missed a weeks, so we were back for another. It is our favorite meal for $8.75 per serve, with a shared Fries. Although we don’t think we really need the fries.

Dinner

We sous vide a half Rack of Lamb and then fried off the skin side to render some of the fat layer there. We served with a Salad of Raspberries, Feta and Mint on a Bed of Spinach.

  • The Rack of Lamb was $14.27, but we split that into two meals, or $3.57 per serve
  • Raspberries were $2.20 and we used ½ of the punnet, or 55c per serve
  • The Mixed Greens were $1.49 and we used half, or 38c each
  • Mint was from our garden
  • The Feta adds 48c per serve
  • Add 15c for Dressing ingredients
  • Add 30c for Greens.

An excellent meal for $5.43 per serve.
