Sep 13: Chicken Thighs in Marsala Sauce on Rice and Peas

Lunch

Foodie Greg bought home another Tarte Au Brie Et Aux Tomatoes, which we enjoyed for $4.29 or $2.15 per serve. In order to avoid the soggy bottom we’ve experienced with this Tarte before, Foodie Greg heated a sheet pan in the oven, and placed the Tarte on parchment paper on the sheet pan to go into the oven. It was considerably more successful.

Dinner

A simple meal of raw Chicken Thighs simmered for a couple of hours in a Marsala Sauce, and served on Rice and Peas.

  • The Chicken Thighs were $6.09 or $3.05 per serve
  • Brown Rice adds 34c per serve
  • Frozen Garden Peas add 30c per serve
  • The Marsala Simmer Sauce was $2.69 or $1.35 per serve.

A reasonably tasty meal for $5.14 per serve. We there in a few baby potatoes lost in the fridge!

Sep 12: Stuffed Shells with Marinara Sauce

Lunch

For lunch we had the remaining Pork and Sage Rissoles in a Ciabatta with Gouda and a smear of Carolina BBQ Sauce.

  • The Ciabatta is 58c
  • Add 10c for Carolina BBQ Sauce
  • A serve of the Bacon, Pork and Sage Rissoles is $2.99, which we shared, or $1.50 per serve.

A very tasty sandwich for $2.18 per serve.

Dinner

A simple Meatless Monday of frozen Stuffed Shells with a prepared Marinara Sauce.

  • The Shells were $3.49 and we only prepared half, or 88c per serve
  • The Marinara Sauce is $1.79 and we used half, or 45c per serve
  • Add 20c for freshly Grated Parmigiano Reggiano.

The Shells were quite good and made the meal only $1.53 per serve.

Sep 11: Sous vide Rack of Lamb with Farro, Picked Beet and Feta Salad

Lunch

A trip to Home Depot led to a side trip for Lamb Gyros from New York Chicken and Gyro. We picked up two at $8.17 with tax and tip each.

Dinner

It was time for a sous video Rack of Lamb with Farro, Pickled Beet and Feta Salad.

  • The Rack of Lamb was $28.69, but we split that into two meals of two each, or $7.17 per serve
  • The Feta was $7.99 but we used 1/6 or 67c per serve
  • Pickled beets in vinaigrette are $1.69, of which we used about ⅓ or 28c per serve
  • The farro was $1.79 for the pack, but we shared ⅓ or 10c per serve
  • Add 10c for Apple Cider Vinegar on the salad.

A very tasty meal, for $8.32 per serve, although we have decided that Rack of Lamb should be roasted to render more of the fat.

Sep 10: Bacon, Pork and Sage Rissoles with Salad

Lunch

A simple lunch of Chicken Bone Broth with Spinach Tortellini known as Cappelletti in Brodo.

  • Chicken & Mushroom Bone Broth was $7.49 or $3.75 per serve
  • The Tortellini was $4.49 or $2.75 per serve.

It was quite tasty for $6.50 per serve.

Dinner

We had enjoyed our meat mix for Sausage Rolls so we decided to make the Bacon, Pork and Sage recipe into Rissoles. We will get three serves.

  • The Ground Pork was on special $4.70, or $1.57 per serve
  • The Bacon was on special for $3.60 and we used ⅝, or 67c per serve
  • Sage came from our garden
  • 8 oz Panko breadcrumbs are $2.99 and we used half, or 50c per serve
  • A Pastured Egg is 50c or 17c per serve
  • The onion is 8c per serve
  • Add 20c for Onion and other ingredients
  • Add 20c for Lettuce
  • Add 30c for Cherry Tomatoes
  • We used about ½ of the $3.95 Sharp Cheddar, or 66c per serve.

The recipe worked spectacularly well for Rissoles, for $4.35 per serve.

Sep 9: Pan Fried Barramundi with Oven Fries and Heirloom Tomato Salad

Lunch

For lunch we had Smoke Trout Salad on Toasted Italian Bread with melted Gouda.

  • The Italian Bread is 32c per serve
  • The Gouda was 51c per serve
  • We shared a 3.5oz can of Smoked Trout for $1.75 per serve

  • The Fries were $1.49, and we shared half or 38c per serve
  • The Heirloom Tomato was $2.21 (on special), or $1.11 per serve
  • The Shredded Arugula and Pickled Onion add 10c per serve.

A very tasty meal for $6.59 per serve.

Sep 8: Soutzoukakia with Cucumber, Watermelon, Feta and Mint Salad

Lunch

Foodie Greg picked up a Wood fired Neapolitan Style Flatbread from Aldi for $5.49 or $2.75 per serve.

Dinner

We paired the remaining Soutzoukakia with a Cucumber, Watermelon, Feta and Mind Salad.

  • The Soutzoukakia was $2.62 per serve
  • The Watermelon was 75c per serve
  • The Feta was $5.49 and we shared ¼ or 69c per serve
  • Mint was $2.99 and we shared half, or 75c per serve
  • Add 30c for Cucumber
  • Add 10c for Pickled Onion.

A varied and tasty meal for $5.21 per serve.

Sep 7: Country Deli Steak Salad

We swapped it up a little by preparing our Chorizo, Smoked Bell Pepper and Gouda sandwich as a Panini in a Ciabatta Roll.

  • The Ciabatta Roll is 58c per serve
  • The Gouda is 34c per serve
  • The Chorizo was $4.72 and we used half, or $1.18 per serve
  • Fire Roasted Peppers cost $1.99 and we used half, or 50c per serve
  • Add 40c for Garlic Spread.

The sandwich worked even better as a Panini for $3.00.

Dinner

Although we normally get the Marinated Skirt Steak Dinner, tonight we decided to try the same Steak on a Salad for $12.81 per serve, which was far better than we expected. We felt the Onion Rings didn’t fit, but otherwise excellent.

We also purchased a “slice” of New York Cheesecake, which was very good.

Sep 6: Watermelon Salad

Lunch

Maybe because it reminds us of Italy and the Autogrill sandwiches, but we had the Speck and Arugula Panini again.

  • The Speck was $3.99, or $2.00 per serve
  • The Ciabatta is 58c per serve
  • Arugula adds 40c per serve
  • The Duke’s Mayonnaise adds 25c per serve.

Although we recall all the Autogrill (Italian Truck Stop chain) sandwiches came with a cheese component we don’t think it would add anything to this excellent sandwich for $3.23 per serve.

Dinner

It’s been a long time since we’ve had Nigella Lawson’s Watermelon Salad. Over the years we’ve simplified it a little, dropping Olives and Parsley, but retained the essential flavors.

  • The Watermelon was $3.99, and we will get four serves, or $1.00 per serve
  • The Feta was $5.49 and we shared ¼ or 69c per serve
  • Mint was $2.99 and we shared half, or 75c per serve
  • Add 20c for Pickled Onion.

This was as tasty as we remembered it for $2.54 per serve.

Sep 5: Roast Chicken Leg with an Arugula, Cherry Tomato and Parmesan Salad

Lunch

We had pancakes for lunch with Butter and Nutella for about 95c per serve.

Dinner

By swapping our Meatless Monday until tomorrow we had a low preparation dinner of the Legs from the Rotisserie Chicken, with an Arugula, Cherry Tomato and Parmesan Salad.

  • The Chicken was $3.33 with a coupon, so each serve was 83c
  • Arugula adds 45c per serve
  • Add 80c for Shaved Parmesan
  • Add 50c for Balsamic Vinegar and Olive Oil
  • Add 30c for Cherry Tomatoes
  • Sweet Ginger Sauce adds 10c per serve.

A simple, but tasty meal for $2.98 per serve.

Sep 4: Sous Vide Poached Shrimp in a Mango Avocado Salad

Lunch

For the sake of something different, we took the remaining Rotisserie Chicken Breast, added Tomato, Mayo and a little bit of Arugula and put it in a toasted Brioche Bun.

  • The Brioche Buns are 64c per serve
  • The Chicken was $3.33 with a coupon and we shared a Breast, or 42c per serve
  • The Beefsteak Tomato was 71c (after that same coupon) and we used 1/3 or 12c per serve
  • The Duke’s Mayonnaise adds 10c per serve.

The combination worked very well with the Brioche Bun adding richness, for $1.30 per serve.

Dinner

We’ve been waiting for a Mango to ripen so we could enjoy a Poached Shrimp, Avocado and Mango salad.

  • 1 lb of shrimp was $8.99 on sale,  or and we used half $2.25 per serve.
  • Mango was 40c per serve
  • Avocado was $1.49, or 75c per serve
  • Add 35c for Lettuce
  • Add 20c for dressing ingredients.

A very tasty salad for $3.95 per serve.
